Handmade Biscotti
These biscotti originated from a recipe my friend, Ann Wasserman,
gave me one afternoon while I was visiting her kitchen. Shelley's
Biscotti was founded October 22, 1996, based on this recipe. My
intent was to provide fresh-baked biscotti for espresso cafes and
gourmet grocers, and to this day we are still producing a handmade
product with a focus on quality ingredients.
Quality Ingredients
Raw almonds are purchased from a grower's collective in Ballico,
California and stored in our freezer. We roast only the amount that
we need each day. Whole stick Ceylon cinnamon is acquired from Sri
Lanka and ground fresh. We buy only small quantities of organic
flour in order to ensure freshness. The biscotti are twice baked
which ensures their longevity and makes them excellent shippers.
After the second baking, the Nude Biscotti are packaged and the
others are hand dipped in chocolates.
Focus on Simplicity
I've worked in commercial kitchens my entire professional life.
With Shelley's Biscotti, I chose to keep it simple and focus on
doing one thing extremely well. We have one recipe and produce one
cookie. On bake days, my employees and I concentrate on baking the
best biscotti that we can. We call it the Zen of biscotti.
